Blackberry Apple Pie

Ingredients
- 2/3 cup sugar
- 1/4 cup flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon grated lemon peel
- 1/4 teaspoon salt
- 2 cans Oregon Blackberries, drained
- 2 cups pared, diced tart apples
- pastry for 2 crust pie
- 1 tablespoon butter
Instructions
Preheat oven to 400 degrees F. Mix together sugar, flour, cinnamon, lemon peel and salt. Add fruit and toss lightly. Line 9-inch pie pan with half of pastry. Place filling in pastry lined pan; dot with butter. Roll out remaining pastry and place over filling. Slash top crust in 3 or 4 places to allow steam to escape; seal and crimp edges. Bake 35-40 minutes or until golden brown and filling begins to bubble. Makes 8 servings.
Tip: If the edges begin to overbrown, cover edges with aluminum foil during last 15 minutes of baking.
Tip: For an attractive touch, after rolling out the top crust use a small cookie cutter to cut out shapes from the pastry. Replace cutout dough to another part of the crust.
