Gooseberry Fool Pie

Ingredients
- 1 1/2 cup shortbread cookie crumbs
- 1 (4 oz.) package flaked coconut
- 4 tablespoons butter, melted
- 1 can Gooseberries
- 1-2 drops green food coloring
- 1/2 cup sugar
- 2 tablespoons cornstarch
- Pinch of salt
- 2 cups whipping cream, whipped
Instructions
Measure 1/4 cup coconut into a shallow pan. Mix remaining coconut with cookie crumbs and melted butter. Press evenly over bottom and sides of 9 inch pie plate. Bake 10 minutes at 325 degrees . Cool. Toast the 1/4 cup coconut until golden brown (about 5 minutes). Mix sugar, cornstarch and salt in saucepan. Add gooseberries with syrup. Cook until thickened. Add a drop of green food coloring just to tint lime green. Chill. Fold in whipped cream and spoon into cooled shell. Garnish with toasted coconut. Chill till firm.
