No Bake Gooseberry Pie

Ingredients
- 1 Can OregoN Gooseberries, drained, reserve syrup
- ½ cup sugar
- 2 ½ tablespoon cornstarch
- ¼ teaspoon cinnamon
- 1/8 teaspoon salt
- 1 tablespoon butter or margarine
- 1 baked 9-inch pie shell
Instructions
Mix sugar, cornstarch, salt and cinnamon. Drain syrup from gooseberries and add water to measure 1 cup liquid. Add liquid and butter to sugar mixture. Cook, stirring, until thickened. Add gooseberries. Cover pan and let cool. Pour into baked 9" pastry shell. Garnish with whipped cream.
Variation: Add 3/4 c. finely chopped, pitted dates before stirring in gooseberries.
