Plum Kuchen

Ingredients
- 7 T. butter or margarine
- 1/4 c. sugar
- 1 c. flour
- 1/2 t. salt
- 2 cans Purple Plums, well drained and pitted
- 1/2 t. cinnamon
- 1/4 t. baking powder
- 3/4 c. dairy sour cream
- 1 egg, well beaten
Instructions
Sift together sugar, flour, salt, cinnamon and baking powder; cut in butter to make fine crumbs; set aside 1/4 c. mixture. Press remainder of crumbs onto bottom of 8 square pan. Arrange plums over crumb layer and sprinkle reserved crumbs over. Bake for 20 minutes at 400 F. Meanwhile in chilled bowl with chilled beaters, whip chilled sour cream until double in volume (about 5 minutes). Fold in beaten egg; pour over plums. Bake an additional 25 to 30 minutes. Cut into squares and serve warm. Serves 9.
