Swell Berry Swirl Pie

Ingredients
- 1 can Oregon Blackberries*
- 1 teaspoon grated orange peel
- 1 teaspoon cornstarch
- 1/2 teaspoon ground cinnamon
- 1 quart vanilla ice cream, softened**
- 1 prepared (9 inch) cookie crumb pie shell
Instructions
Drain berries, reserve 1/2 cup syrup. Blend reserved syrup, orange peel, cornstarch and cinnamon. Cook thoroughly; stir berries into sauce. In large bowl, swirl berry mixture into softened ice cream. Turn into pie shell. Freeze at least six hours or overnight.
Serves 6 - 8.
*Oregon Boysenberries, Blueberries or Raspberries can be substituted for Blackberries.
**Let ice cream stand at room temperature 15 - 30 minutes or until softened, but not melted.
