Tom Thumb Cake

Ingredients
- 3 eggs
- 1 1/2 c. sugar
- 1 c. vegetable oil
- 2 c. flour
- 1 can Oregon Purple Plums, drained and chopped
- 1 c. buttermilk
- 1/2-1 c. chopped nuts
- 1 t. salt
- 1 t. soda
- 1 t. allspice
- 1 t. vanilla
- Buttermilk Icing:
- 1 c. sugar
- 1/2 c. buttermilk
- 1 T. white corn syrup
- 1/2 t. soda
- 1/2 t. vanilla
- 1/2 c. butter
Instructions
Blend sugar and oil, add eggs and beat well. Sift all dry ingredients together and mix into batter alternately with 1 c. buttermilk. Stir in nuts, plums and vanilla. Pour into ungreased 9X13 pan and bake 1 hour at 300 F. Mix ingredients for icing in saucepan. Bring to a boil and cook until it forms a soft ball, about 15 minutes. Upon removing cake form oven, poke holes in top with a fork and pour the hot buttermilk icing over it immediately.
