3 egg yolks, beaten
2 T sugar
2 T vinegar
2 T pineapple juice
1 dash salt
1 T butter
2 cans Oregon Royal Anne Cherries, drained
2 C drained pineapple tidbits, reserve 2 tablespoons juice
2 oranges, peeled, cut into pieces and drained
2 C tiny marshmallows
1 C heavy cream, whipped


  1. Combine egg yolks, sugar, vinegar, pineapple juice, salt, and butter in top of double boiler.
  2. Cook over hot, not boiling, water till thick, stirring constantly. Cool.
  3. Stir in cherries, pineapple tidbits, orange pieces, and marshmallows. Fold in whipping cream.
  4. Spoon gently into serving bowl. Chill 24 hours in refrigerator, so flavors blend to fruity perfection.

Serve as a dinner salad or dessert. Makes 6 to 8 servings.
