What shipping carriers do you use?

We ship our fruit purees with FedEx Freight as well as other common carriers. We have excellent relations with these freight providers, which translates to competitive freight rates that we pass on to our customers.

We offer 1.5L pouches (select fruit), 42 lb boxes, drums, and totes (select fruit).

How many gallons are in a 42 lb box?

At a 10 Brix average, a box of puree will contain 4.8 gallons of puree.

How do I open an aseptic bag liner?

The plastic cap on the aseptic bag is fitted with an easy open “peel away” tab. For tote use, we offer for sale a reusable custom tote valve. We also sell a handy quick disconnect set up that can be used to quickly snap onto a bag spout to a pump system to easily and quickly empty the 42# boxes or 425# drums.

What is the manufacturing process for your purees?

We only use fruit that has had the seeds and skins removed, that is heated in a kettle for a very short period of time which creates the first microbial “kill step”. The entire system is “sealed” allowing no contamination once the product reaches aseptic temperatures. We quickly cool the puree to protect the freshest fruit flavors and color for your finished product. Each batch is tested by a 3rd party lab to ensure our specifications are met before shipping to our customers.

Will purees alter clarity of my beer?

The natural occurring proteins in beer, extracted from malt and hops, can create a haze or reduce clarity of the beer. Each fruit contains differing levels of pectin, or proteins, that can also contribute to haze. Our aseptic process deactivates some of the pectins, but different products will have differing levels of pectin in the finished product.

How much acidity or pH will the fruit contribute?

Our fruit purees all have relatively low pH, which is natural for fruit grown in our region. With a small addition of fruit to your brew, you should not experience a significant drop in pH in the finished product, but the pH level of some fruits, (Passionfruit, Black Currant, Key Lime) will contribute a tartness to your finished beverage.

How much puree should I be using?

Our customers typically use 1/2 – 2 pounds of puree per gallon of finished beer. So, for a 7 barrel system (217 gallons), you could use 109 lbs. or all the way up to 434 lbs. Fruits with subtle flavors and esters such as Strawberry, Blood Orange and Red Tart Cherry usually require the higher 2 lbs. per gallon dosing. Stronger flavors like Raspberry, Sweet Cherry, and Blackberry can give great results at lower dosing levels (starting around 1/2 lb). It just depends on if you are looking for a strong fruit forward note, or more subtle fruit notes that produce more delicate fruit nuances.

Our puree is 100% fruit. We remove the seeds and pits from the fruit and aseptically pack the puree in 42 lb bag/boxes, 425# drums or 2,300# totes (custom and on demand). The seeds make up 12% of the whole berry by weight and pits make up 20% of the fruit weight. If you use 100 lb of whole fruit, the equivalent amount of puree is 88 lb (100 lb less 12 lb of seeds equals 88 lb).

How much concentrate should I use?

Our concentrates are generally used at a 4:1 ratio compared to our SS purees, meaning you can use about a quarter of the amount of concentrate as you would puree. However, the exact amount depends on the flavor intensity you’re aiming for in your beverage. Brewers have reported a wide range of dosing, depending on the desired fruit intensity for their specific beverage, whether beer, cider, RTDs, hard seltzers, THC, or CBD beverages.

Here’s a quick overview of our three concentrates:

  • Mango and Lemon: These concentrates are not used for color, as they have a dark honey-like appearance due to their high brix concentration. The lemon concentrate is about twice as potent in “citrus intensity” as our single strength lemon puree.
  • Grapefruit: This concentrate has a reddish hue and is particularly popular in Paloma-style beverages. It’s also used in large-volume retail brands, so we offer it in 50 gal drums, as well as our 5 gal BIBs.

For batch sizing, some brewers use a mix of both concentrates and purees. Adding a box or two of concentrates and then top-noting with purees can enhance the umami and color of your finished beverage.

Can Diced Pourable Fruit be used in bubblers or other dispensing equipment?

No, the diced fruit pieces will cause issues with clogging. If you’re interested in offering fruited beverages via bubbler, we recommend our lineup of Smooth Pourable Fruit products.

Do you have dosing recommendations for Pourable Fruit?

We typically recommend a 1/2 oz of Pourable Fruit per 8 oz serving in beverages, including ones featuring Diced Pourable Fruit. For batching Smooth Pourable Fruit in bubblers, we recommend 16oz (1/2 bottle) per 2.5 gallon batch of lemonade or iced tea.

Is Pourable Fruit Non-GMO?

Yes, all Pourable Fruit products are Non-GMO Project Verified.

Does Pourable Fruit need to be refrigerated?

Pourable Fruit is stored and shipped frozen. Once thawed, it must be kept refrigerated.

How do I use Pourable Fruit?

Pourable Fruit is most commonly used in beverage applications, though it’s versatile enough for many culinary uses, too. Smooth Pourable Fruit works well in dispensed beverages like lemonades and iced teas, in alcoholic and non-alcoholic cocktails, and frozen beverages. Diced Pourable Fruit is an eye-catching drink topper in beverages like lemonades and iced teas, milkshakes, smoothies, and aqua frescas.

What is Pourable Fruit?

Pourable Fruit is a sweetened puree product offered in two different formats: Smooth and Diced. Smooth Pourable Fruit is great for incorporating into beverages, especially in dispensed beverage equipment like bubblers and slushy machines. Diced Pourable Fruit is a versatile beverage topper featuring the same sweetened puree base as Smooth, and includes real pieces of diced fruit.

Do you offer organic products?

We are proud to be a certified Organic processor, but do not currently have any organic products in distribution.

Are your products gluten free?

We are pleased to say that our facility does not use any gluten containing ingredients in the processing or packaging of any of our fruit products.

Are your products non-GMO?

All canned and jarred products are all Non-GMO Project verified.

Do your cans contain BPA?

All of our cans have an internal non-BPA lining made from polyester material.

Can I use a can of fruit if it is dented or damaged?

Our recommendation is that you never buy any canned goods from the grocery store that have been dented or damaged. If you drop or damage a can bringing it home or after storing it in the pantry, you should open the can and check for any “off” aroma before deciding to eat the product. If you are not sure when the can was damaged, err on the safe side and dispose of the canned goods.

Are your products allergen free?

Oregon Fruit does not use any of the eight major allergens (milk, eggs, peanuts, tree nuts, fish, shellfish, soy and wheat) or common sensitizing agents (gluten, sesame and sesame products, sulfites, mustard and mustard products, celery and celery products, azo dyes, carmine) in any of our products or in our processing areas.

Do you use corn syrup?

No, we use pure cane sugar to add a touch of sweetness to our natural fruits.

Are your products Kosher?

We are Kosher certified through Orthodox Union for all of our products except any caneberry products (Blackberries, Raspberries and Boysenberries). The whole caneberries cannot be certified Kosher by Orthodox Union even though they are processed similarly to our other whole fruits.
