Blackberry Breakfast Bars

Ingredients

  • 1 Can Oregon Fruit Blackberries, Drained, juice reserved
  • 1 1/4 tablespoons Cornstarch
  • 1/2 tablespoon Lemon Juice
  • 1/2 cup All Purpose Flour
  • 1/2 cup Whole Wheat Flour
  • 1 cup Quick Cooking Oatmeal, uncooked
  • 1/2 cup Brown Sugar, firmly packed
  • 3/4 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Allspice ground
  • 1/2 teaspoon Cinnamon ground
  • 1/2 cup (1 stick) Butter

Instructions

  1. Preheat oven to 400⁰
  2. Put reserved juice in saucepan, add lemon juice, and cornstarch. Cook, stirring until thickened. Stir in Blackberries, set aside.
  3. Grease a 9X9 inch baking pan. Combine flour, oatmeal, brown sugar, baking powder, salt, allspice, and cinnamon. Cut in butter until crumbly. Press 2/3 of the mixture into greased pan.
  4. Bake 15 minutes or until lightly browned. Cool slightly, spread Blackberries over crust.
  5. Crumble remaining oatmeal mixture over berry mixture and press lightly. Bake 20-25 minutes more until lightly browned. Cool in pan. Cut into 9 bars.
