Blackberry Lemon Fool

  1. Reserve 1/3 cup of the blackberries.
  2. Add the blackberries into a pan, followed by 2 tablespoons of powdered sugar, lemon zest and juice. Simmer until syrupy, then leave to cool.
  3. Chill for a few hours.
  4. Add the whipping cream to a bowl with the remaining 1 tablespoon of powdered sugar, then swirl through the blackberry sauce.
  5. Serve in glasses and add extra blackberries on top.
