Blueberry Salsa


  • 1 can Oregon Fruit Products Blueberries
  • 1/2 cup Chopped, Peeled, and Seeded Cucumber
  • 1/2 cup Chopped, Peeled Fresh Tomato
  • 1/4 cup Chopped Green Onion
  • 1/4 cup Chopped Green Pepper
  • 1 tbsp Jalapeno Pepper, finely chopped
  • 1 tbsp Cilantro, snipped
  • 1 tbsp Lime or Lemon Juice
  • 1/4 tsp each of Salt and Pepper


  1. Drain and rinse blueberries, set aside. Reserve 1/2 cup of the blueberry syrup.
  2. In a bowl combine cucumber, tomato, green onion, green pepper, jalapeno pepper, cilantro, lime juice, salt, and pepper. Stir in drained blueberries.
  3. Makes about 1 1/2 to 2 cups; Serve with meat or tortilla chips.
