Dark Sweet Cherry And Chicken Salad


  • 1 can Oregon Fruit Products Dark Sweet Cherries, drained and quartered
  • 1/2 cup Plain Greek Yogurt
  • 1/4 cup Mayonnaise
  • 1 tsp white Vinegar
  • 1/2 tsb Dried Herbes de Provence
  • 3 cups Roasted Chicken Breast, diced
  • 1/2 cup Smokey Blue Cheese, crumbled
  • 1 Green Onion, sliced thin
  • 1/4 cup Celery, chopped
  • 1/4 cup Pecans, chopped
  • Salt and Pepper to taste
  • 4 Croissants
  • Arugula


  1. In a medium mixing bowl, whisk together yogurt, mayonnaise, vinegar and Herbes de Provence. Gently stir in chicken, blue cheese, green onion, celery, pecans and dark sweet cherries. Season with salt and pepper to taste.
  2. Serve on croissants with arugula or choice of lettuce.
