Dark Sweet Cherry and Chocolate Zucchini Bread


  • 1 can Oregon Fruit Products Dark Sweet Cherries, drained and halved
  • 1/2 cup Canola Oil
  • 1/2 cup Honey
  • 2 Eggs, lightly beaten
  • 1 tsp Pure Vanilla Extract
  • 1 1/2 cup Coarsely Grated Zucchini, medium-sized
  • 3/4 cup All-Purpose Flour
  • 3/4 cup Whole Wheat Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Ground Cardamom
  • 1/2 tsp Fine Sea Salt
  • 1/2 cup Dark Chocolate Chips


  1. Pre-heat the oven to 350F.
  2. In a large bowl, beat together the oil and honey. Stir in the eggs, vanilla, and zucchini. Mix until well combined.
  3. In a separate bowl, whisk together the flours, baking soda, baking powder, salt, and cardamom. Stir the dry ingredients into the wet ingredients, being careful not to overmix. Gently fold in the cherries and chocolate chips.
  4. Pour the batter into a lightly greased 8 1/2-by-4 1/2-inch loaf pan. Bake until a toothpick inserted in the center of the bread comes out clean, 50-60 minutes.
