Gooseberry and Elderflower Sparkler



  1. Put gooseberries and sugar into a cocktail shaker. Muddle together.
  2. Sieve the gooseberries into bowl. Add reserved gooseberry juice.
  3. Pour gooseberry base into shaker.
  4. Add lemon juice, cordial and top with ice. Shake well and strain with wide strainer.
  5. Serve into glasses, top with white sparkling wine.
