Light Sweet Cherries Ambrosia Salad – Classic Recipe


  • 2 cans Oregon Fruit Products Light Sweet Cherries, drained
  • 3 Egg Yolks, beaten
  • 2 tbsp Sugar
  • 2 tbsp Vinegar
  • 2 tbsp Pineapple Juice
  • 1 Dash Salt
  • 1 tbsp Butter
  • 2 cups Pineapple Tidbits, drained, reserve 2 tablespoons juice
  • 2 Oranges, peeled, cut into pieces and drained
  • 2 cups Tiny Marshmallows
  • 1 cups Heavy Cream, whipped


  1. Combine egg yolks, sugar, vinegar, pineapple juice, salt, and butter in top of double boiler.
  2. Cook over hot, not boiling, water till thick, stirring constantly. Cool.
  3. Stir in cherries, pineapple tidbits, orange pieces, and marshmallows. Fold in whipping cream.
  4. Spoon gently into serving bowl. Chill 24 hours in refrigerator, so flavors blend to fruity perfection.
  5. Serve as a dinner salad or dessert. Makes 6 to 8 servings.
