Queen of Tarts Blackberry Chicken Salad

Ingredients

Vinaigrette:
Salad:
  • ½ can Oregon Fruit Blackberries
  • 10 oz Mixed Greens
  • 1 Mango, peeled and sliced
  • 2 Chicken Breasts, grilled and sliced
  • 1 Large Avocado, sliced
  • 1/3 cup Shelled Pistachios

Instructions

  1. Puree ½ the blackberries with the lemon juice in a food processor. Strain into a jar, discard seeds. Add the rest of the ingredients and shake well.
  2. Divide the salad ingredients evenly amongst 4 plates.
  3. Sprinkle with Kosher Salt and freshly ground black pepper. Drizzle with vinaigrette.
