Saucy Gooseberry Barbecued Ribs


  • 1 can Oregon Fruit Products Gooseberries*
  • 3-4 lbs Beef Rib Bones, small
  • 1/4 cup Onion, minced
  • 1 clove Garlic, minced
  • 2 tbsp Soy Sauce
  • 2 tbsp packed Brown Sugar
  • 1 tbsp Lemon Juice
  • 1 tsp Dry Hot Mustard
  • 1 tsp Cornstarch
  • 1/8 tsp Pepper
  • Salt


  1. Combine gooseberries, including syrup, onion, garlic, soy sauce, brown sugar, lemon juice, mustard, cornstarch, pepper and cayenne.
  2. Sprinkle ribs with salt. Place ribs in shallow baking dish and pour gooseberry mixture over all.
  3. Refrigerate, covered, overnight. Turn once during marinating period.
  4. Bake at 375ยบ F. 15 minutes on each side; brush generously with remaining marinade during baking.
