Equipment needed: Instant Pot or Pressure Cooker
1 can Oregon Blueberries in 100% Blueberry Juice - (1 cup of juice drained and reserved for cooking, and blueberries reserved for topping)
1 cup steel cut oats
2 cups water
1/2 tsp ground cinnamon
1/4 tsp ground cardamom
Dash of ground cloves
1/4 tsp kosher salt
1 tsp Vanilla extract
1 tbsp Maple Syrup
Additional toppings:Nuts, Dried fruit, Cream, Maple syrup
- Mix together Steel cut oats with water, blueberry juice, and salt in an Instant Pot until salt dissolves. Stir in the cinnamon, cardamom, and clove.
- Secure the lid to the Instant Pot and set to pressure cook for 6 minutes on high. Let the instant pot naturally depressurize (approx. 20 min)
- Once the pot has safely depressurized, stir in Vanilla extract and Maple syrup.
- Serve warm and top with slivered almonds and blueberries, or whatever you prefer!
