1 can Red Tart Cherries, drained, reserve juice
1 tablespoon cornstarch
1/2 cup sugar
1 tablespoon butter or margarine
1 cup flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
4 tablespoons sugar
3/4 cup milk
1 egg, slightly beaten
- In a saucepan, combine juice from cherries, cornstarch, and sugar. Cook and stir until thickened. Remove from heat and stir in butter or margarine. Add the cherries.
- Mix together the flour, baking powder, salt, and sugar. Mix together the milk and beaten egg. Add to the dry ingredients. Pour cake mixture into a 9-inch square baking pan. Pour the cherry mixture evenly over the cake mixture. Bake at 400 degrees for 35 minutes.
