1 can Oregon Dark Sweet Cherries, drained and halved
1/2 cup canola oil
1/2 cup honey
2 eggs, lightly beaten
1 teaspoon pure vanilla extract
1 1/2 cups coarsely grated zucchini (about 1 medium-sized zucchini
3/4 cup all purpose flour
3/4 cup whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cardamom
1/2 teaspoon fine sea salt
1/2 cup dark chocolate chips
- Pre-heat the oven to 350F
- In a large bowl, beat together the oil and honey. Stir in the eggs, vanilla, and zucchini. Mix until well combined.
- In a separate bowl, whisk together the flours, baking soda, baking powder, salt, and cardamom. Stir the dry ingredients into the wet ingredients, being careful not to overmix. Gently fold in the cherries and chocolate chips.
- Pour the batter into a lightly greased 8 1/2-by-4 1/2-inch loaf pan. Bake until a toothpick inserted in the center of the bread comes out clean, 50-60 minutes.
