1 (3-1/2) lb. chicken or chicken breasts, cooked and cubed
1 C diced celery
½ small red onion, diced
2 T blue cheese crumbles
1-1/2 C (to taste) reduced fat mayonnaise
1 tsp seasoned salt
1 can Oregon Red Tart Cherries, drained
Favorite sandwich bread, lightly toasted, OR butter lettuce cups
- In a medium mixing bowl combine chicken, celery, onion, blue cheese, mayonnaise and seasoned salt. Stir to mix well.
- Gently fold in cherries.
- Cover and refrigerate 2-4 hours before serving.
- To serve, divide Red Cherry Chicken Salad between 8 slices of bread or butter lettuce cups.
