1 can Oregon Gooseberries*
1/4 C minced onion
1 clove garlic, minced
2 T each soy sauce and packed brown sugar
1 T lemon juice
1 tsp each dry hot mustard and cornstarch
1/8 tsp pepper
Dash cayenne pepper
3 to 4 pounds small beef rib bones
- Combine gooseberries, including syrup, onion, garlic, soy sauce, brown sugar, lemon juice, mustard, cornstarch, pepper and cayenne.
- Sprinkle ribs with salt. Place ribs in shallow baking dish and pour gooseberry mixture over all.
- Refrigerate, covered, overnight. Turn once during marinating period.
- Bake at 375º F. 15 minutes on each side; brush generously with remaining marinade during baking.
Makes about 8 servings.
*Oregon Red Tart Cherries may be substituted.
