1 1/2 cups reserved juice from Oregon Fruit Blueberries in Juice
1/2 cup white sugar
1 teaspoon vanilla extract (optional)
- Place blueberry juice and sugar in a small saucepan. Bring to a gentle boil over medium high heat, stirring to dissolve sugar completely.
- Remove from heat and stir in vanilla extract (if using). Allow to cool and pour into a heat proof jar (such as a glass canning jar), cover tightly, and chill.
- Use syrup in Italian Sodas, lemonade, iced tea, or cocktails! Keeps for up to seven days in the refrigerator.
Makes one pint.
