1 can Oregon Fruit Gooseberries, drain and reserve juice
1 tablespoon sugar
Juice ½ lemon
2 ounces elderflower cordial
2 ounces chilled sparkling wine or prosecco, for topping up
- Put gooseberries and sugar into a cocktail shaker. Muddle together.
- Sieve the gooseberries into bowl. Add reserved gooseberry juice.
- Pour gooseberry base into shaker.
- Add lemon juice, cordial and top with ice. Shake well and strain with wide strainer.
- Serve into glasses, top with white sparkling wine.
